I'm making curried vegetables for dinner, and decided to make some chai to go along. It's very simple, and so much better than store bought. I like it quite strong, so feel free to adjust the spices to your personal taste.

Chai (Indian spiced tea)
in a small pot, bring to a simmer:
3 cups water
1/2 tsp. whole cloves
1 tsp. coriander seeds
1 tsp. cardamom seeds
2 cinnamon sticks
1 tsp. whole peppercorns
1 thumb sized piece of fresh ginger, chopped coarsely

Place the lid on the pot and simmer gently for 15-20 min. Turn off the heat and add:
1/4 c black tea leaves
1/4 c milk
large spoonful honey

Steep for 3-5 minutes, pour through a sieve, and enjoy.
