The cooler weather this week has inspired me to bake again. This morning I threw together a quick banana bread, and as you can see, it was a hit. The recipe is based off The Joy of Cooking, but I melt the butter so there is no need to use the mixer.
Quick Banana Bread
1 1/2 c flour
1 1/2 tsp baking powder
1/2 tsp salt
2-3 ripe bananas, mashed, plus 1/2 banana cubed
2 eggs at room temp.
2/3 c sugar
6 Tbs butter melted, and cooled slightly
mix together all the dry ingredients in a medium bowl. Mix together wet ingredients in a small bowl. Add wet to dry and stir, careful not to over mix. Bake at 350 in a greased bread pan for 50-60 min.
