sweet potato with aoli






I really like baked sweet potatoes, but in those winter months when the farmer's market is less abundant, it's easy to get bored. Here is a very simple way to liven them up.
Wash and slice 2 large or 4 small sweet potatoes into wedges. Pour a little olive oil over them, and roast at 400 degrees for about 1/2 hour. While they roast, combine 1/3 c mayonnaise, a minced garlic clove, 1-2 T fresh lemon juice, and 1/4 t pepper. Chiffonade 6-8 basil leaves and combine with 1 t salt. When the sweet potatoes are browned and soft, pull them out of the oven and sprinkle the salt and basil leaves on top. Serve hot with aoli for dipping.
