pizz'amore
This year, staying home and making dinner together sounded like the just right way to celebrate Valentine's day. I was inspired to try a new recipe over here and I'm so glad I did. Nothing's wrong with the Barefoot Contessa recipe I usually use, but this one was just as simple and turned out much chewier and frankly, just better. My only regret is that I didn't use a the full 2 tsp. salt. I tend to under salt my food (or so the wife tells me) but this could have used a little more even for me. I'm usually a margherita girl, but last night the full-on veggie with home-cured olives, artichoke hearts, yellow pepper, sauteed mushrooms, garlic and fresh basil really hit the spot. I hear the prosciutto one wasn't bad either.
